Anyone who’s opened Facebook or Instagram has seen those food video recipes, typically shot from above, from Tasty. Whether you share, like or make them many are destined to whet the appetite.
Now, instead of logging into Facebook you can reach for your very own cookbook featuring many of those recipes. Tasty, the instructional cooking arm of BuzzFeed, is out with “Tasty Latest & Greatest: Everything You Want to Cook Right Now” (Clarkson Potter/Publishers $19.99). There are more than 80 recipes spread over 192 pages in nine chapters. The photos are mouth-watering and recipes are easy-to-follow and don’t require a lot of ingredients or equipment.
Included are chapters on party fare, vegetarian fare and trending recipes. Recipe highlights include Jalapeno Popper Dip, Sliders Four Ways and Fried Mac ‘n’ Cheese Sticks. Not every recipe has a photo, but most do including some step-by-step photos. Vegetarian recipes feature Baked Buffalo Cauliflower, Peanut Noodle Pasta and Vegan Mac ‘n’ Cheese.
There are also entree recipes designed for weeknight cooking and dessert recipes including the Chewiest Chocolate Chip Cookies Ever. The recipes are user friendly with ingredients needed in bold.
Buttermilk-fried Chicken Sandwich
Makes: 8 servings
Prep time: 20 minutes
Total time: 1 hour plus marinating time
Buttermilk marinade
2 cups buttermilk
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
8 boneless skinless chicken thighs
Dill dressing
1 1/2 cups plain Greek yogurt
3 tablespoons fresh dill, chopped
1 teaspoon garlic powder
2 tablespoons lemon juice
1/4 cup grated Parmesan cheese
Seasoned flour
2 cups all-purpose flour
1 tablespoon salt
2 teaspoons black pepper
1 1/2 teaspoons cayenne pepper
1 tablespoon garlic powder
Peanut or vegetable oil, for frying
Softened butter for buns
8 brioche burger buns
1 head butter lettuce
2 tomatoes, slice
In a medium bowl, combine all the buttermilk marinade ingredients. Toss in chicken thighs to coat. Marinate for at least one hour in the refrigerator. Meanwhile, in a small bowl, combine all the ingredients for dill dressing. Cover and let sit for at least an hour in the refrigerator.
In a medium bowl, combine all ingredients for seasoned flour. Dip the marinated chicken in flour until chicken is completely covered.
Heat the oil to 350 degrees in a deep pot. Do not fill more than half full with oil.
Carefully fry chicken for roughly 7 minutes, or until cooked through. Internal temperature should reach 165 degrees and the chicken should be golden brown and crispy.
Drain on a paper towel-lined plate, or wire rack.
Heat a large skillet. Butter cut sides of the burger buns, then toast on hot skillet until browned and crisp.
Build sandwich with bread, lettuce, fried chicken, tomato slice, and dill dressing.
