An excellent example of natural color in food can be found in the pomegranate cheesecake served at Sufi’s Kitchen.

The rich color of pomegranate juice produces a shocking pink confection that almost leaps off the plate. But, this dessert isn’t just delightful to look at: The fruity tartness of the pomegranate is a lovely complement to the cake’s cream-cheese tartness. It enhances what people already love about cheesecake — a dessert that’s balanced, and not too sweet.

Sufi’s cheesecake is well-rounded, too — the texture and crust hit the mark as squarely as the flavor and color do. The cake is soft and velvety, but substantial, and almost crumbly. The crust adds crunch and a firmer texture, even served from a delivery box, as well as a bit of saltiness that helps set off the rest of the fruity, sour and sweet flavors.
