A few weeks ago, a friend and I had dinner at Barcelona restaurant in Inman Park. We tried a variety of their tapas and I particularly enjoyed the Swordfish a la Plancha – a small slice of swordfish in a tangy salsa verde. We liked it so much, we sopped up all the extra salsa with whatever bread we had left. Do you think they would be kind enough to share the recipe? We are always glad when a restaurant can share a recipe for our loyal readers. Barcelona Wine Bar serves a wide range of tapas in seasonal rotation. Fish served a La Plancha with Salsa Verde is a menu staple and the recipe works with any white fish such as swordfish or the cod you see in the photo. The recipe was created by executive chef James Burge. When supplying the recipe, he wrote, “At Barcelona we pride ourselves in preparing tapas with bold flavors and letting the ingredients speak for themselves. The fish a la plancha dish is clean and simple—just fresh fish and herbs with a lot of flavor—it doesn’t get much simpler than that.”
