Q. My wife and I enjoy the Cabbage and Beef Soup at Shoney’s. Any chance you could get the recipe? It sure would be good on a cold night.

A. Shoney’s Executive Chef Will Eudy sent us the recipe for this homestyle soup. It makes a flavorful dish that’s a lot like chili but without the spice or heat. Easy to understand how it could become a favorite and appeal to everyone at the table.

In fact, Andrea Nourse of Shoney’s home office in Nashville wrote that the Cabbage Beef Soup has been a staple in its family-dining restaurants for more than 30 years. “This hearty soup, most popular during the colder winter months, is a favorite of Shoney’s guests. In fact, the Cabbage Beef Soup and Potato Soup are at the top of the list in popularity among Shoney’s many soup selections,” she said.

Shoney’s Cabbage Beef Soup

Hands on: 20 minutes

Total time: 1 hour

Makes: 13 cups

1 pound ground beef

1 pound cabbage, cut into 1-inch squares

2 (15.5-ounce) cans kidney beans, do not drain

1 (28-ounce) can diced tomatoes, do not drain

2 cups beef broth or consommé

1 medium onion, diced

1 green pepper, diced

1/4 cup tomato paste

2 cloves garlic, minced

2 tablespoons Worcestershire

1 tablespoon black pepper

Salt and pepper

In a large soup pot, brown ground beef over medium heat, about 5 minutes. Drain fat. Stir in cabbage, kidney beans, tomatoes, broth or consommé, onion, green pepper, tomato paste, garlic, Worcestershire and black pepper. Simmer 30 minutes or until cabbage is tender. Taste for seasoning. Serve hot.
