"While We're Young" opens today in Atlanta theaters and there's a surprising tie to Atlanta. In the movie, Amanda Seyfried's character (Darby) makes her own ice-cream named "Darby's Ice-Cream." The ice cream itself makes a cameo appearance in the movie, but here in Atlanta, it's made a bigger impact.

Jake’s Ice Cream, in Irwin Street Market, has created a “While We’re Young” special custom flavor in conjunction with the film’s release. Jake Rothschild, owner of Irwin Street Market, is known for his ability to create any customized flavor imaginable, and Darby’s was a natural fit.

“We already made an ice cream with avocado, and were in the works of making an avocado and almond vegan ice cream,” said Jake Rothschild. “The movie release happened at the right time. We were ready to make that flavor.”

Rothschild and his business partner Sandy Houdeshell worked together to create the “While We’re Young” ice cream as part of Jake’s Joyscream line. These ice creams are all vegan, high protein, lactose-free and safe for diabetics.

“Jake’s was only open for a few months when people were asking for sugar-free and vegan options,” said Rothschild. “Ice cream is such a pleasure to eat, and it bothered me that they couldn’t eat it, so I started experimenting.”

After testing out soy-based products, Rothschild found it didn’t marry well with other flavors. When soy got a bad rep for health concerns, he changed to almond and coconut milk. Rothschild found it tasted just like regular ice cream. Rothschild now makes his own almond and coconut milk, as well as a date, fig and palm sugar syrup for the Joyscream line. An addition of avocado or plantains gives the vegan ice cream a creamy texture.

While Jake’s is keeping the recipe under wraps, you can get your fix of the ice cream whenever you want, as it’s become a permanent flavor. AJC was lucky enough to visit Jake’s and watch Houdeshell make the flavor.
