Harry Pagancoss is a busy fellow. The chef and restaurateur recently developed the menu for newly opened City Tavern in Kennesaw but he's got more on his plate than pub grub. He's involved in two other concepts opening in 2016.

This spring, Pagancoss and his business partner Kemal Karsli will be opening Sivas Xpress, a fast-casual version of The Sivas, a Midtown restaurant and hookah bar that offers Turkish and Mediterranean bites. Sivas Xpress will be located in downtown Atlanta at 33 Hurt Plaza.

Bigger in scale is Pagancoss’ urban market concept, Caravaca Market. Located in a new development at 780 Peachtree Street in Midtown, Caravaca Market will house a bakery, coffee bar, wine and cheese retail shop, plus a full bar and restaurant, all within 5,000 square feet of space. Pagancoss said that he anticipates a fall opening.

Diners at Caravaca can expect hot and cold small plates that cull from both Spanish and Latin American culinary traditions. From the former will come tapas such as croquetas and Galician-style octopus, while Latin bites will include the likes of Peruvian causitas (an appetizer layered with mashed potatoes and other fillings like chicken salad topped with ornate garnishes) and Chilean empanadas filled with seasoned ground beef.

The urban food hall takes its name from Caravaca de la Cruz, a city in southern Spain, explained Pagancoss. The venture, he said, is inspired by his travels around the globe in search of food as the host for Latin American travelogue "GPS: Guided by Flavors" and as a presenter of shows for Univision, Telemundo and Mexican Media company TV Azteca. Pagancoss is a native of Puerto Rico who most recently resided in Miami before making Georgia his home five years ago.
