Chef Julio Delgado has a new concept in the works, set to open next door to his Minnie Olivia Pizzeria in Alpharetta.

Located at 10 Roswell St., Fogón and Lions will open in 2022 offering a menu of wood-fired meats, produce and seafood. The restaurant was inspired by Delgado’s grandfather, Polo Lopez, who was a butcher in Delgado’s native Puerto Rico. A photo of Lopez will hang in the entryway of the restaurant.

To cook his food, Delgado commissioned a 14 foot-long hearth from Grills by DeMant. Dishes will include ceviches, chicken croquettes, Spanish and local cheeses and charcuterie, whole roasted suckling pig, shrimp tacos, Cuban sandwiches and a selection of salads.

Fogón and Lions’ beverage program will have a rum program and a variety of tequilas, with a focus on Spanish brands.

The restaurant, which will feature a 30-seat indoor/outdoor bar, will feature live music on select evenings.

Delgado, who opened Minnie Olivia in 2019, previously worked at New Realm Brewing and JP Atlanta, in addition to several other restaurants and hotels. He also served as a Georgia Grown executive chef in 2019.
