It’s not a good sign when the food prep staff has been busy getting ready for the lunch crowd and yet the employee hand sink remains bone dry.

During a routine inspection at Agavero Cantina in Lilburn, a Gwinnett County health inspector took off points when seeing the dry sink while also watching two employees put on gloves and begin handling clean dishes without first washing hands.

Agavero Cantina, 4140 Lawrenceville Highway, Lilburn, failed the routine inspection, scoring 55/U. Previous scores were 94/A and 77/C

Among other code violations, two containers of refried beans and one container of chicken never reached a safe temperature of 41 degrees after cooling over a six-hour time limit. The food was discarded.

Another container of prepared salsa only dropped 1 degree in temperature after cooling for almost an hour. The inspector said the restaurant’s cooling methods were ineffective and need to be changed. Containers used in cooling were too large and did not allow for a proper ice bath, the inspector said.

Also the container of salsa was stored on the floor in the kitchen, and food was also stored on the floor in the walk-in cooler.

Other points were taken off because of some needed cleaning and facility repairs. A cheese grater, lemon slicer and multiple dishes were unclean to sight and touch. Trash from the restaurant was stacked outside the dumpster. Some of the floors in the bar area needed to be refinished, the inspector said. Also, the kitchen back door did not completely self-close.

Agavero Cantina will be re-inspected.
