Raw fish, spring rolls and rice were not protected from contamination at Ichiban Sushi Bar & Grill in Peachtree City, and restaurant’s health score fell to a 61/U.

Points were taken off because raw fish was thawing inside the hand sink at the sushi bar. Spring rolls were stored uncovered in the freezer. And no time logs or procedures were kept for sushi rice which was away from a heating element, the Fayette County health inspector said.

In addition, dirty dishes were found among clean dishes at the sushi bar. And plates at the bar were not stored inverted to protect against contaminants.

Among other code violations during the routine inspection, raw fish was stored above prepared sauces in the walk-in cooler. The employee hand sink at the bar had no soap or paper towels.

Spray pest control was stored on a shelf near the dishwasher. Commercial pest sprays are not allowed; only professional pest control services can be used.

The restaurant needed cleaning. The inspector said additional cleaning is needed on the outside of the oven and coolers. Also the stove hood and hood vent filters needed cleaning to remove grease build-up.

Ichiban Sushi Bar & Grill, 520 Crosstown Drive, Peachtree City, will be re-inspected. Previous scores were 92/A and 99/A.
