UPDATE: General Manager Mark Ecclestone said TJ's has had the same kitchen managers for the last 20 years, and has never had an issue with the health department.

"We've learned from our mistakes and all issues were corrected the day of inspection," Ecclestone said in an email. "The main issues that I recall were not wearing gloves on the line which we do. Our manager went back to check [on] an order and returned to the line and plated a fully cooked slider plate without gloves which cost us nine points, our mistake but we have gloves on the line which we showed the inspector."

Ecclestone addressed other violations, such as a case of raw eggs being stored improperly.

"Again, our fault but the case was not broken and the cartons were in an enclosed box. They were moved to the proper location," he said. "There was no chance of contamination."

Regarding food line items that were one degree above the acceptable temperature, Ecclestone said ice bags have been placed on them, keeping them "well below" the required temperature.
