The food prep staff at Zen Fuji in southern Forsyth County was careless with their disposable gloves and hand-washing during a recent routine inspection.
Employees were carrying disposable gloves in their pockets, storing them on top of raw chicken and food contact surfaces. The gloves were also being reused.
Employees were also washing their hands without soap. And one employee touched raw salmon, then ready-to-eat foods without changing gloves and washing hands. The manager in charge failed to instruct the staff in proper food safety procedures, the health inspector said.
Zen Fuji, 5192 McGinnis Ferry Road, Alpharetta, failed the inspection with a 21/U. Previous scores were 73/C and 80/B.
Among other code violations, raw shrimp, beef and chicken were stored next to, and also above, ready-to-eat foods.
Sushi rice prepared the day before had not been discarded. Prepared rice should not be kept for more than four hours, and any leftovers should always be thrown out at the end of the day, the inspector said.
Raw meat was being thawed on the counter top. Vegetables were not washed prior to prepping.
Points were also taken off because menu items served as raw or under-cooked were not disclosed as such. And imitation crab was not honestly disclosed on menus either. Menu labels and food labels need to match, the inspector said.
Single service containers were being reused. The inspector said shelving throughout the kitchen was heavily soiled with an accumulation of food debris. The hand sink at the sushi bar had no hot water.
Zen Fuji will be re-inspected.
