I had a great meal with good friends at Public School 404 on Howell Mill Road. My Carne Asada Steak Taco was wonderfully classic, yet there were some unexpected underlying flavors I'd like to know more about. There was a zesty sweet, yet almost tangy, fresh flavor blended in with the savory marinade sauce, I believe. Would the chef be willing to share the recipe so I could try to recreate this delicious dish at home — or, at least ask my husband to recreate it since he is the better cook? Public School 404 is a group of gastropubs with a fun theme – old school, public school. Corporate chef Jonathan Wood was happy to share the recipe for the Carne Asada marinade and credits Grill Concepts/Public School for its creation. The restaurant uses it to marinate the skirt steak they use in their tacos and says this quantity should season about 2 1/2 pounds of beef. We think the marinade would be good with just about any cut of beef or chicken and tested it with a flat iron steak.

To use it, make the marinade and pour over your preferred cut of meat in a container or sealable plastic bag. Marinate at least 12 hours before use, turning meat as needed to make sure it is completely seasoned. When ready to grill, remove the meat from the marinade and season with salt and pepper before grilling.

The Carne Asada Steak Taco includes shredded cabbage tossed in their Poblano Crema Sauce, and is topped with pickled red onions, Cotija and chopped cilantro. Wood suggests the marinated meat would be great in a burrito or breakfast taco or on a grin bowl. They serve a Southwest Bowl filled with black beans, quinoa, cabbage and more and featuring steak marinated in this mixture.
