At Yami Sushi and Hibachi in Decatur, the health score was lowered because an employee was not wearing gloves when cutting ready-to-eat vegetables, then picking them up with bare hands and putting them on a customer’s plate.
Also the dishwasher was not dispensing sanitizing solution during the routine health inspection. Employees set up the three-compartment sink to wash dishes.
The restaurant had a repeat code violation of improper cold food storage. The DeKalb County health inspector observed raw fish and eggs stored above lettuce and soup in one cooler. And in the prep cooler, raw fish and eggs were stored above ready-to-eat vegetables. All the items were relocated to prevent cross-contamination.
Yami Sushi and Hibachi, 1248 Clairmont Road, Decatur, scored 63/U, down from a previous score of 80/B.
In other code violations, raw meat was thawing underneath the prep counter. The meat was placed back into the freezer.
Prepared rice, which was to be used for fried rice, was not holding at a safe temperature, and there was no time document showing how long it had been away from a heat source. The rice was put into the freezer for rapid cooling.
Points were also taken off because utensils used for food preparation were stored with their handles touching the trash can. These were removed and cleaned. Other utensils used for cooking were being stored in tepid water. The inspector said the water should be kept at 135 degrees or hotter.
