A Cuban restaurant in Tucker was asked to close after failing a second routine inspection.
At Sabores De Mi Tierra, 3210 Tucker Norcross Road, cooked pork with a prep date of May 10 was still in the refrigerator on a May 27 inspection. The meat had an “obnoxious spoilage odor,” the inspector said. The bag of pork was stored with another bag of cooked pork which had an expiration date of May 25.
Because of the spoilage, both bags of pork were discarded. Prepared foods are to be thrown away after seven days, according to the health code.
Sabores De Mi Tierra scored 51/U. The restaurant had a routine health score of 61/U in December then brought it up to a 95/A on the follow-up inspection in January.
During the inspection, the restaurant had repeat violations of improper cooling, thawing and storing of food items.
The inspector said two gallons of black beans were cooling in a bulk container submerged in a couple of inches of ice. The beans were separated into smaller containers and submerged in a more effective ice bath.
Also, raw beef was thawing at room temperature in the meat sink, with some uncovered pepper sauce stored at the same sink.
The inspector said chicken was not cooked through and instructed the cooks to bring the meat to a safe temperature.
And the air temperature in one of the coolers was too high, so the food was moved to another cooler.
Sabores De Mi Tierra must submit a corrective action plan to health officials, then pass a follow-up inspection.
