A Chinese eatery in Snellville recently failed its third consecutive routine inspection with multiple critical food safety violations.

Gwinnett County health officials temporarily suspended the food permit at Hong Kong restaurant, 3550 Centerville Highway, so the staff could receive on-site training. The restaurant was later re-opened that same day.

Among the violations, employees were not washing their hands with soap, and not washing at all when switching tasks where hands were contaminated.

Potentially hazardous cooked foods were not being cooled by proper methods. Fried chicken had been placed in large, thick pans on a table near the back door and the food was not cooling rapidly enough to prevent contamination, the inspector said.

The chicken was moved onto thin sheet pans and placed either in the freezer for rapid cooling or on a cooling rack in the refrigerator.

Hong Kong restaurant scored 40/U on the inspection. The restaurant failed a routine inspection earlier this year with 60/U before bringing the health score up to an 82/B on a follow-up inspection.

Hong Kong restaurant also had a failing routine health score of 40/U in December.

Among other violations, multiple raw food items, including chicken, beef and shrimp, were stored improperly in coolers.

Points were also taken off for a repeat violation of unclean food contact surfaces. The inspector said several knives were stored with old food debris still on them.

Hong Kong restaurant will be re-inspected.
