Q: I worked in North Carolina for three years in the early 60s and learned to like a product called liver mush. I think it is only made in the Carolinas, and mostly in North Carolina. A: Joe, you can call it chocolate soufflé, but I still think your grandchildren are going to see right through your ruse. For the uninitiated, liver mush is made with pig livers, head parts and cornmeal. You’ll soon get the chance to serve liver mush to those unsuspecting kids. Q: I need a small amount of Dutch cocoa, a little less than half a cup. I don’t want to have to buy a large amount that’s going to sit around. Any suggestions? Thanks. Amy Goodwin, email

A: Dutch process cocoa, unlike the lighter, reddish natural cocoa, has been treated with an alkaline solution, which acts to partially neutralize the acid. Although it’s darker than natural cocoa, Dutched cocoa boasts a less robust chocolate flavor.
