We enjoy eating at Seed Kitchen & Bar in East Cobb. My daughter especially likes their chicken schnitzel. She always requests extra miso mustard on the side even though the dish comes with a generous serving of this creamy, zingy sauce. I would love to recreate this sauce at home to serve with potatoes and steamed vegetables. Thank you. — Julia Patel, Marietta

Doug Turbush is one of the city’s most generous chefs, always happy to share a recipe, or in this case, three. The schnitzel is a classic, as is the arugula salad. You expect to see miso used in Asian preparations so it’s a bit of a surprise in this dish.

The Miso Mustard gets its start in classic tradition, prepared as you’d make a bordelaise or a peppercorn cream sauce, then Turbush adds miso for an extra boost of umami.
