Fogo de Chao has an amazing food bar along with its fine meats. Their Gigantes in Vinaigrette is a wonderful dish I'd like to get the recipe for. Thanks! — Karen Lockridge, Milton

Gigantes are large lima beans and they’re not that easy to find. The chefs at Fogo de Chao suggest that if you can’t find gigantes, you use chickpeas instead. You can purchase canned chickpeas, or cook dried peas by soaking them overnight and then draining, covering with fresh water and cooking until tender.

Fogo de Chao Gigantes in Vinaigrette

6 cups cooked gigantes or chick peas

1/2 red onion, cut into 1/4-inch dice

1 tablespoon chopped parsley

Juice of 2 lemons

1 tablespoon yellow mustard

1 tablespoon balsamic vinegar

1 teaspoon olive oil

1/4 teaspoon salt

In a large bowl, combine gigantes, onion and parsley.

In a small bowl, whisk together lemon juice, mustard, vinegar, olive oil and salt. Pour over bean mixture and toss to combine. Serve immediately or cover and refrigerate. Makes: 6 cups

Per 1/2-cup serving: 144 calories (percent of calories from fat, 15), 7 grams protein, 24 grams carbohydrates, 3 grams fiber, 3 grams fat (trace saturated fat), no cholesterol, 66 milligrams sodium.
