Star Provisions’ Chocolate Chip Meringue Cookies

Hands on: 10 minutes

Total time: 55 minutes, plus cooling time

Makes: 15

3 extra large egg whites

1 cup granulated sugar

2 teaspoons cocoa

1/3 cup chocolate chips

2/3 cup chopped walnuts

Preheat oven to 200 degrees. Line a baking sheet with parchment paper.

In a medium bowl with a hand mixer, beat egg whites into stiff peaks, about 4 minutes. With mixer on high, gradually add sugar. Once all sugar has been added, continue beating for 2 minutes.

Sift cocoa on top of egg whites. Add chocolate chips and nuts and gently fold them into the beaten egg whites. Do not fold cocoa completely into meringues. Using a 2 tablespoon scoop, drop mixture onto prepared baking sheet. Bake 45 minutes or until you can slide meringues off parchment using a spatula. Do not attempt to pick up meringues at this stage. They are very fragile. Cool on wire baking sheet and store in an airtight container.
