At Grace 17.20, a restaurant in Peachtree Corners, the Gwinnett County health inspector observed a lack of training or oversight of employees that could result in a food-borne illness. For example, a server brought in dirty dishes from the dining area, placed them in the dish pit then returned to take food and drinks to other diners without washing hands.
The same server also used bare hands to place lemons on the rims of water glasses for customers. The lemons were discarded.
Grace 17.20, 5155 Peachtree Parkway, failed the routine inspection with 58/U. Previous scores were 90/A and 75/C.
Points were also taken off because some foods were at unsafe temperatures, and other foods being held on time control were not properly labeled with start and discard times.
The inspector said food items inside a reach-in cooler and some on ice near the cook-line were above the maximum temperature range for potentially hazardous foods.
Shredded cheese, goat cheese and sliced fried green tomatoes were all discarded. Also, chicken salad in another cooler was thrown away because it was too warm.
Several different sauces and butter were also discarded because the facility had no written procedures for using time as a public health control. There were no documents showing how long these items had been out.
In other code violations, raw poultry was being thawed in the vegetable sink. The food was removed, and the sink was washed, rinsed and sanitized.
Some condiments had been taken out of their original containers and were unlabeled. The new containers were labeled during the inspection.
Grace 17.20 will be re-inspected.
