A Japanese buffet restaurant in Stockbridge was asked to close after failing another health inspection, its third in less than six months.

The food permit for Huge Hibachi Sushi Buffet, 5425 N. Henry Blvd., was recently suspended because of “continual disregard for public safety.” The Henry County inspector said several risk factors were repeated even after previous meetings with health officials to improve food safety standards.

Huge Hibachi scored 51/U on the routine inspection. The restaurant had a 28/U on its previous routine inspection last fall, then scored 67/U and 77/C on follow-up inspections.

Among repeat code violations, employees working with food were not washing their hands after contamination. Employees were touching their face and then preparing food. Some were merely rinsing their hands then wiping them on their aprons.

The inspector noted that plates were stacked inside one of the hand-sinks, making it inaccessible to wait staff and food handlers.

Points were also taken off for repeatedly leaving food items uncovered and exposed to contamination. Raw and cook foods were stored uncovered in coolers throughout the facility, according to the report. Some raw chicken in the freezer was uncovered and had severe freezer burn, the inspector said.

Numerous food items from the buffet were discarded because they were not maintained at safe temperatures. Cooked pork, fried shrimp, chicken, egg rolls, cooked fish head along with several cold-held items were all thrown away.
