During a recent routine inspection, employees at Chopstick’s China Bistro, 405 Peachtree Parkway, Cumming, were careless with hand-washing while working with the food, including while prepping raw chicken.

One employee touched his clothes and wiped his nose without removing the gloves and washing up before prepping food, the Forsyth County health inspector said.

Another employee touched raw chicken then continued to cook and handle utensils while wearing the same gloves.

Chopstick’s China Bistro failed the inspection with a 52/U. Previous scores were 86/B and 75/C.

Points were also taken off for other food safety violations. For example, the same utensil used for cooking raw meat was also used to dispense spices, the inspector said.

Food items were not separated in storage to prevent contamination. Raw beef was next to cooked chicken, and raw chicken was stored next to raw pork and eggs.

Employees were eating in the kitchen near the customer food, and also storing their personal food, drinks and belongings there.

Cabbage was not washed prior to cutting. And neither the dishes nor the dining tables were properly sanitized, according to the inspection report.

In other violations, boxes of food were stored directly on the floor in the kitchen and in the walk-in freezer. Soy sauce containers were being re-used. Other food storage containers were soiled with food debris. Equipment and shelving were also heavily soiled with food debris, according to the report.

Chopstick’s China Bistro will be re-inspected.
