A Gwinnett County health inspector found roaches in a hot holding unit at the county’s detention center cafeteria during a recent routine inspection. Also, at a self-service food bar, several salads made with mayonnaise had not cooled to a safe temperature range within four hours after preparation.

Chicken salad, egg salad and tuna salad were all discarded, according to the inspection report.

Gwinnett County Detention Center, 2900 Highway 316, Lawrenceville, failed the inspection with a 58/U. Previous scores were 83/B and 86/B.

Other potentially hazardous foods were not properly cooled after preparation. The inspector said carrots, tuna salad, peas and corn had been placed in deep pans instead of shallow pans for cooling. They were discarded.

Points were also taken off for other code violations involving the self-service food bar. Some of the hot-held items, such as hamburgers, turkey soup and chicken wings, were not maintained at safe temperatures, the inspector said. These were reheated.

Other food items were not protected from contamination and were relocated underneath the sneeze guard. And some of the serving utensils were inadequate for dispensing food, the inspector said.

Among other code violations, food prep employees were not changing their gloves and washing their hands after touching and adjusting their hair. And several were wearing jewelry while working with food.

Several pans and serving trays were not cleaned to sight or touch, and one of the dishwashers was not dispensing sanitizing solution at an adequate concentration.

The inspector said the detention center needed to maintain a pest-free facility, and also repair a hand-sink that had no hot water.
