The food at a Norcross area Roll Me sushi restaurant wasn’t being protected from contamination, according to a Gwinnett County health inspector.

Raw seafood and ready-to-eat foods were being dipped into the same tempura batter. Various coolers had food items stored improperly, with raw meats and seafood next to washed vegetables and other ready-to-eat items, putting the food at risk of cross-contamination.

For example, raw beef was stored behind mushrooms in one cooler. Raw mussels were above ice cream in a freezer. Raw crab and raw shrimp were above a variety of prepared foods in another cooler.

The restaurant had no written time-control documentation for the sushi rice, dumplings, tempura batter, and the shrimp, crab sticks and soft shell crab cooked in the batter. The rice and batter were discarded and the other items were given a time-stamp for disposal.

Roll Me, 1560 Indian Trail Road, failed the routine inspection with 37/U. Previous scores were 89/B and 90/A.

In other code violations, the freezers and equipment needed cleaning. Heavy ice and food buildup were found in the freezers, and the cook-line equipment had grease and food buildup.

Grease droplets were hanging off the ventilation hood, according to the inspection report. The inspector said this was a potential contamination source.

The restaurant should clean the equipment and air ducts and maintain them clean to prevent contamination of food products, the inspector said.

Roll Me will be re-inspected. [Editor's Note: Roll Me passed the follow-up inspection with 91/A.]
