Brigitte Nguyen of Lexington, Ky., picked up a cool $50,000 recently when she won first prize at the National Chicken Cooking Contest with her Chinese chicken burgers with rainbow sesame slaw (see recipe). Serve Brigitte’s winner with baked potato chips.

Chinese Chicken Burgers With Rainbow Sesame Slaw (Sunday)

Serves: 6 Hands on: 25 minutesTotal time: 40 minutes

1 pound each ground chicken breast and ground chicken (see Note)

2 tablespoons reduced-sodium soy sauce

1 tablespoon sugar

1 tablespoon sesame oil

6 cloves minced garlic

1 tablespoon minced lemongrass

1/3 cup thinly sliced green onions, plus more for garnish

1 tablespoon canola oil

2 tablespoons hoisin sauce

3/4 cup reduced-fat mayonnaise

Juice and zest of 1 lime

2 tablespoons Sriracha or Thai or other chili sauce

6 hamburger buns with sesame seeds, toasted

For the slaw:

2/3 cup each julienne bell pepper (red, orange or yellow), julienne snow peas and julienne jicama

1 1/2 tablespoons unseasoned rice wine vinegar

1 tablespoon each sugar and reduced-sodium soy sauce

1 teaspoon each Sriracha or Thai or other chili sauce and sesame oil

1 tablespoon toasted sesame seeds.

In a large bowl, mix together chicken, soy sauce, sugar, sesame oil, garlic, lemongrass and green onions. Divide mixture into 6 patties; set aside. Heat oil in a ridged grill pan or skillet on medium. Place chicken on pan and cook on medium-high, turning once, 7 minutes per side or until internal temperature is 165 degrees. During the last 2 minutes, baste each burger with 1 teaspoon of the hoisin sauce. Meanwhile, combine mayonnaise, lime juice and zest and chili sauce in a small bowl. Combine slaw ingredients in a medium bowl.

To assemble, place 1 teaspoon lime mayonnaise on bottom and top of bun. Place chicken on bun bottoms and top each with slaw. Serve with any remaining slaw and lime mayonnaise on side. Garnish with green onions.

Notes: Ground "chicken" is usually dark meat without skin. Be sure to read the label. I lightened Brigitte?s original recipe.

Per serving (burgers with lime mayonnaise): 432 calories, 36 grams protein, 15 grams fat (32 percent calories from fat), 2.8 grams saturated fat, 36 grams carbohydrate, 93 milligrams cholesterol, 838 milligrams sodium, 1 gram fiber.

Per serving (slaw): 40 calories, 1 gram protein, 2 grams fat (39 percent calories from fat), 0.3 gram saturated fat, 5 grams carbohydrate, no cholesterol, 108 milligrams sodium, 1 gram fiber.
