Profile

Wrecking Bar’s take on the regional fruited Berliner Weisse style called “Floridaweisse” is a spring seasonal that uses its popular Gose as the base. It’s soured with house lactobacillus culture and salted with a blend of sea salts from Atlanta’s Beautiful Briny Sea.

From there, the beer is dosed with Thai and sweet basil, fermented on grapefruit juice and pulp, and aged on grapefruit zest. The result is a stylistic mash-up that brims with sunny tropical aromas and flavors tinged with briny, spicy, and herbal notes.

Pair with

Wrecking Bar does a keen, under-the-radar weekend brunch. The Marianna, an open-faced omelette, with house-cured coppa, radish, spicy local greens, shaved fennel, and buttermilk vinaigrette, would make a great match for Tampa Timeshare. And so would one of chef Terry Koval’s seasonal salads.
