We’ve got three local ways to make your salads even more delicious.

Georgia Peach Pecan Dressing from Georgia Peach World 

Travel I-95 between Brunswick and Savannah and you cannot miss the signs for Georgia Peach World. Unlike some peach stands that are only open seasonally, this one is open year ‘round, selling fresh peaches during the season, but offering a world of peach-flavored products throughout the year. We sampled their Georgia Peach Pecan Dressing, made especially for them by the folks of Braswell Food Company in Statesboro. Not content to just be a salad dressing, it also works as a marinade or can be reduced down to a sticky sweet glaze for chicken, pork or seafood. But we loved the use recommended by Karly Bell, one of the assistant general managers there. She suggested using it to add a little something special to a traditional mayonnaise-dressed chicken salad. It was a great idea.

Mod Squad Martha is the creation of Melissa Ann Barton, formerly of Nashville, now of Charleston, South Carolina. Barton’s many career paths led her to create Mod Squad Martha (referring to a nickname she acquired while living in Nashville) with its line of vinaigrettes, coffee and a Moroccan salmon marinade and rub and Mod Squad Mutt, offering dog biscuits and fun dog-themed kitchen accessories. A portion of profits from both companies go to support Crossroads Campus, a non-profit serving animals and young adults. The kids in the program make the treats sold under the Mod Squad Mutt brand, providing them with an income and a start on a possible career path. The fun design of the label on her Chive Jive Vinaigrette and the interesting ingredient list caught our eye so we bought a bottle. The vinaigrette is a combination of chives, citrus vinegars, Meyer lemon juice, honey, Dijon mustard and Vidalia onion. It’s subtly sweet, subtly tangy, and subtly flavored with the chives and onion. We could eat it by the spoonful, but instead we’re enjoying it on salads and as a dip for fresh vegetables.

Johnny Fleeman is the proprietor of Legends Steakhouse restaurants in north Alabama and middle Tennessee. Check out his website and you’ll read the story of a serial entrepreneur who started his career at the tender age of 12. One of the many things he’s done is to create the low sodium steak marinade and seasoning he uses at his steakhouses today. When customers asked if they could buy bottles to use at home, he turned that opportunity into yet another business, this one selling the marinade along with cocktail sauce and three varieties of salad dressing. Lately we’ve been enjoying the honey mustard salad dressing. Fleeman tells us it was his idea to use yellow mustard in this dressing instead of the Dijon mustard that’s more commonly used. It was just the ticket and 30 years later, it’s his bestselling flavor. It strikes just the right balance between tangy and sweet, it’s mild enough that the kids like it, but it’s nuanced enough that foodies find it delicious, too.
