A Japanese restaurant in Norcross failed a recent routine inspection because the sushi was not protected from cross contamination.
The sushi chef didn’t use soap when washing his hands, and wasn’t careful to keep the raw sushi rolls separated from the others when prepping, according to the inspection report.
Gloves were not changed when performing multiple tasks while prepping the sushi, the Gwinnett County inspector said. For example, the sushi chef touched California rolls with the same gloved hands that had been used to touch raw sushi items.
The same knife was used to cut both types of sushi without first being washed and sanitized. The same sushi roller and plastic wrap were also used for both types of sushi.
And the chef used the same wiping cloth to clean the prep counter after both raw sushi and other foods were prepared. The cloth was never changed nor placed into a sanitize solution.
Sushi Yoko Japanese Restaurant, 7124 Peachtree Industrial Blvd., Norcross, scored 29/U on the routine inspection. Previous scores were 94/A and 80/B.
Among other code violations, raw chicken and raw steak were cut on the same cutting board without first washing, rinsing and sanitizing the board. The food was discarded.
The restaurant also has numerous items that need correcting or repairing to bring the facility up to code, the inspector said.
Sushi Yoko Japanese Restaurant will be re-inspected.
