During a recent inspection at Jade Dragon Wok-Out in Lawrenceville, an employee dipped a ladle that was contaminated by raw meat into a container of spices.

The spices were discarded, and points were deducted from the health score. Points were also taken off because raw shrimp were prepped next to broccoli without any separation.

In addition, rodent droppings were found on the top and side of a hot water heater. The inspector said evidence of pests must be removed from the facility.

Jade Dragon Wok-Out, 1414 Lawrenceville-Suwanee Road, failed the routine inspection with a 69/U. The restaurant had previous health scores of 88/B and 87/B.

Among other code violations, food was incorrectly stored in the cooler. Pooled eggs were above ready-to-eat crab meat. Raw chicken was stored above raw beef. Unwashed vegetables were above ready to eat sauces.

Numerous containers of food were uncovered in the cooler. Cooked rice was not cooled sufficiently within two hours, and was discarded.

Employees were performing multiple tasks using single-use gloves instead of changing the gloves and washing their hands, the inspector said. One employee touched raw meat then touched a ladle. Another touched raw egg then touched a utensil and a to-go container.

Jade Dragon Wok-Out will be reinspected. [Editor's Note: Jade Dragon Wok-Out passed the follow-up inspection with 96/A.]
