Austin bartender Dennis Gobis, whose pub Drink.Well is always creating innovative cocktails, certainly knows how his way around a bar — so much so that he’s participating in Domaine De Canton’s Global Bartender of the Year Contest on June 9, representing the Midwest. Here’s the recipe for his Blood and Money, which he’ll mix up at the final showdown featuring bartenders from France, Italy and other regions around the U.S.

Blood and Money

1.5 oz Domaine de Canton

1 oz Blood Orange Juice

.5 oz Del Maguey Chichicapa Mezcal

.5 Hakatsuru Draft Sake

.5 Strawberry Puree

3 dashes Rice Wine Vinegar

2 dashes Orinoco Bitters

Combine all ingredients into shaker tin and shake vigorously. Double strain into coupe. Garnish with blood orange and shiso flag.
