One of the most important cocktail events of the year has arrived — Negroni Week.

All over the country, bars and restaurants are participating by donating proceeds from every Negroni, Campari cocktail or Negroni-inspired item sold to the charity of their choice. These include 28 watering holes in Austin.

Imbibe magazine and Campari, a liqueur most recognized by its striking red color, launched Negroni Week in 2013 with a dual purpose: as a celebration of one of the world's best classic cocktails and as an effort to raise money for charitable causes chosen by participating bars.

Although you’ll want to visit these spots to help them meet their donation goals, you can also try making a Negroni yourself at home. Negronis are among the easiest cocktails to make; at their simplest, they feature three ingredients in equal parts: Campari, gin and vermouth. Some bartenders and cocktail lovers argue that one ingredient over the others should have a little extra prominence — but that’s up to your tastes.

Once you’ve perfected a classic Negroni, you can move onto making one with a little variation to it, like this one from Austin’s the Roosevelt Room. Other twists on the Negroni include the Rosita, with reposado tequila, Campari, and sweet and dry vermouth, and the Boulevardier with bourbon, Campari and sweet vermouth.
