Q: I have been trying to find the recipe for marinated coleslaw. This is a more healthful coleslaw than is found in most restaurants, since it is made without mayonnaise. I have recently had it at Dreamland Bar-B-Que, a new restaurant in Roswell. Can you please help me find the recipe for this delicious side dish? — S. Levy, Atlanta
A: "I'm so glad somebody appreciates it, " said John Welch, co-owner, manager and full-time dishwasher at the newly opened Dreamland Bar-B-Que in Roswell. "We thought there was some risk in putting it on the menu, since most folks, especially in the South, are very accustomed to the creamy, mayo-based slaw that is served at most restaurants, " said the Alabama native, who has interests in three barbecue restaurants in his home state. "When we were going through the process of seeing what we wanted to serve here, we thought we would add an alternative for people who are diet-conscious or just looking for something different."
It seems to have been a risk well taken. The marinated slaw has proven to be very popular. Welch was glad to share the recipe.
Dreamland’s Marinated Cole Slaw
Makes 16 servings
Preparation time: 10 minutes
Cooking time: 10 minutes
Standing time: 20 minutes
Refrigeration time: at least 4 hours
3 cups white vinegar
3 cups granulated sugar
1 cup canola oil
2 teaspoons dry mustard
5 pounds green cabbage (long shred, not chopped)
1 medium carrot, long shred
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon seasoning salt
1/2 teaspoon celery salt
In a saucepan, combine vinegar, sugar, oil and dry mustard and bring to a boil. Place shredded cabbage and carrots in a mixing bowl. Pour hot ingredients over cabbage and carrots. Add salt, pepper, seasoning salt and celery salt and mix well. Cover and let stand 20 minutes, then refrigerate at least 4 hours. Serve with slotted spoon.
Per serving: 128 calories, 2 grams protein, 9 grams fat (percent calories from fat, 63), 12 grams carbohydrates, no cholesterol, 285 milligrams sodium, 4 grams fiber.
