As part of our "How to" videos, we'll be teaming up with chefs and industry professionals to share how simple it is to make your restaurant favorites at home. We visited Roswell's Italian gem, Osteria Mattone, where Executive Chef and co-owner Ted Lahey taught us just how easy it is to make homemade pasta.

Both Lahey and owner Ryan Pernice spent several weeks eating their way through Rome. The "Tonnarelli Cacio e Pepe" is a classic Roman pasta. Simple ingredients are synonymous with Italian cuisine and this dish, which translates to "cheese and pepper," contains only three main ingredients: a thin noodle (egg tagliolini, bucatini, or spaghetti), cracked black pepper and pecorino.

Lahey makes this pasta using an industrial Italian-made pasta maker, but you can just as easily use a home version. A few good examples are: KitchenAid's pasta attachment, Atlas Marcato Pasta Maker (150 mm), and CucinaPro Imperia Pasta Machine.
