Chops Lobster Bar is claiming the title. Last week, the restaurant received a delivery of A-5 "Kobe" beef with a BMS (beef marbling score) of 12 out of 12, the highest ranking for beef cuts. This is the first time BMS 12 has been available in Atlanta.

Let’s back up. This type of beef is the highest quality of Wagyu, a beef that is rarely shipped outside Japan. These Wagyu “Japanese cattle” come from four main breeds.

Chops Lobster Bar received their Wagyu beef from the Miyazaki prefecture of Japan. These cattle are assigned a certificate of authenticity which includes a 10-digit Cattle ID number. When a diner orders a Wagyu steak at Chops, they’ll receive a copy of this certificate.

These cattle were raised with star treatment until their (unfortunate) fate on your plate. Wagyu ranchers typically only own 12 to 15 cows and each is given a massage for up to four hours per day to increase the fat marbling. They tend to live for about three years before they are butchered.

Chops Lobster Bar is selling a 2-ounce increment of New York strip or filet for a whopping $20 per ounce. But rest assured that the cut of meat you’ll get will literally melt in your mouth. The meat is marbled with softer fat, lending to buttery and tender taste. Plus its higher in healthy omega fatty acids and is lower in cholesterol than traditional beef.

Chops Lobster Bar will be serving the Wagyu beef until quantities run out.
