Who’s making your drinks?
Julian Goglia, partner and beverage director of The Mercury (and The Pinewood) shares his thoughts on being voted one of the hottest bars in Atlanta; what inspired the restaurant's name; and more in this edition of "3 questions with." What makes The Mercury unique?
We have a 35-seat, 200-person cocktail bar. We quickly and consistently make thousands of cocktails per week.
The Mercury was recently voted as one of the hottest bars in Atlanta by Zagat. Has that changed the atmosphere?
It’s great because we have a lot of people who coming for cocktails. But, it’s also terrifying because the expectation level is [higher]. Since I’m running multiple restaurants, I have to make sure that when I’m not in the building, the [standard is met]. We have almost 15 bartenders that have great personalities, work ethic and is fun to talk to.
What’s the most popular drink on the current menu?
It’s a battle between three: Moscow Mule, Old Fashioned and Ode to Viceroy. We actually planned to call the restaurant Viceroy, but found out there was another restaurant in the vicinity with a similar name so we decided against it.
BONUS: When you’re not at The Mercury, where do you eat and drink in Atlanta?
Harper’s Station has been super important to me personally because it was the first bar I ever worked at. It was huge for my career. I’ve gone there almost every other week since I left and started this business with Brooks. But, they are closing down! My fiancée and I have a standing weekly reservation at Boca Lupa. We go, eat dinner then head to Ticonderoga as well.
