Hemingway-inspired The White Bull to open in Decatur next week

A highly-anticipated eatery is set to open Monday, March 5 on the Decatur Square.

Located next to Brick Store Pub at 123 E. Court Square, The White Bull --named because Hemingway referred to the blank page as "the white bull" --  will offer a "menu of simple, farm-forward American fare," according to a press release.

The kitchen will be overseen by executive chef and partner Pasquale "Pat" Pascarella, who previously served as execuitve chef of Ford Fry's West Midtown restaurant The Optimist and also served a stint in the kitchen at Le Bernardin in Manhattan. Gabriele Besozzi, who previously served as service manager at The Optimist, will serve as partner and general manager. He has also worked at restaurants in London, New York, Miami and his native Italy.

The menu, “a nod to Hemingway’s literary style,” will feature 15 seasonal dishes with a global bent, including pasta dishes made from flour milled at the restaurant, as well as vegetable-forward plates. Ingredients will be sourced from Georgia farmers and purveyors, including Finch Creek Farm, Riverview Farms, Aluma Farm, Stone Mountain Cattle Co. and Levity Farm. Look for dishes including Sapelo Island clams with pig tails, kohlrabi, celery, lemon, and toast; tile fish with aji amarillo, daikon, tapioca, and kale; mafalde with guanciale, black pepper, and pecorino; and baby carrots with muhammara, labneh, za'atar, and chicken skin.

The beverage program, which will be overseen by Matt Scott, will offer Georgia beer, a variety of wines and seasonal cocktails, including bottled cocktails for two poured at the table from vintage glass flasks. The bar will open with the dining room on weekdays and early at 3 p.m. on weekends.

The 2,000 square-foot, 80-seat restaurant’s design, another nod to the “blank page” vibe, will feature a long butcher’s table running through the middle of the space, white subway tile, reclaimed wood and Edison lightbulbs, among other design elements, as well as outdoor seating in the warmer months.

The White Bull will by open from 5-10 p.m. Monday-Thursday, 5-11 p.m. Friday, 3 p.m. for bar and 5-11 p.m. Saturday and 3 p.m. for bar and 5-10 p.m. for food Sunday. The restaurant will also start serving brunch soon.

The space was previously occupied by Truman Tavern, which shuttered in September , and Colbeh Persian restaurant.
