Employees at Sho Asian Cuisine in Cumming were careless with food preparation and cleaning duties during a recent routine inspection. Forsyth County health officials said they need more training in food service.

The inspector took off points because raw chicken was not cooked to a minimum internal temperature. Also, drink nozzles were dirty with mold-like substance. Dishes, still dirty with food accumulation, were stored as if clean.

Sho Asian Cuisine, 4335 Bethelview Road, received a failing health score of 30/U.

Additional points were marked off for poor hygiene practices. One employee touched a hat then touched food, another had an open personal drink on the prep table and another was not wearing a hair restraint while working with food.

A soiled apron was stored in contact with rice. The rice was discarded.

In other violations, sushi rice had been held away from temperature controls for an excessive amount of time. It was discarded. Hot and cold prepared foods were not at safe temperatures. Hot foods were reheated and some eggs were thrown away.

Other prepared food items were not date-marked for disposal. Shrimp was thawed using an unapproved method.

Soy sauce buckets were being reused. There was a plumbing leak at the vegetable sink. And dishes were stacked up in the employee hand sink.

Sho Asian Cuisine will be re-inspected.
