A Duluth Bahama Breeze failed a recent routine health inspection because employees were not careful to follow safe food handling procedures.
Employees were cooking raw shrimp in a fryer basket, then placing cooked shrimp on a plate without changing gloves and washing their hands. The cooked shrimp was discarded due to a cross-contamination risk from the raw shrimp.
Also, some food service employees were changing gloves when necessary, but without washing their hands. There were no paper towels at one of the employee hand sinks, and another hand sink in the bar area had no soap.
The Gwinnett County inspector said the manager in charge needed to do a better job ensuring food safety practices at the Bahama Breeze, 3590 Breckinridge Blvd., Norcross. The restaurant scored 56/U, after having previous health scores of 83/B and 91/A.
In other code violations, raw fish, including salmon and mahi mahi, were in a cooler at unsafe temperatures. The fish was discarded. A tomato sauce was also thrown out because it was not cooled properly. And cut tomatoes were tossed away because they had been held under time control without documentation.
Other points were taken off for using the wrong sinks when preparing food.
Produce was being prepared in a sink that is supposed to be used for thawing and preparing foods other than fruits or vegetables. The sink should have been cleaned and sanitized prior to use, and the produce placed in a clean colander or pan to prevent contamination, the inspector said.
Also, multiple employees were wearing jewelry while handling and preparing food, according to the inspection report.
Bahama Breeze will be re-inspected.
