I have written to this column before, it's one of my favorite things in the AJC, but I have never gotten a recipe printed. Not because you didn't try! So I'm hoping you can get this recipe for me from LaCasa Italian Grill in Alpharetta. My husband and I randomly stopped at LaCasa the other day. We had never been there, and on the server's recommendation I had the "spaghetti squash with fresh vegetables, onions and marinara." It was one of the best dishes I've ever had! And I imagine, it was rather healthy, too. Could you please try to get this recipe for me? Thanks! — Louise R. Plagman, Alpharetta

Plagman is right that we can’t get every recipe our readers request although we do our best. So glad that Pasquale Cardamuro, chef of La Casa Italian Grill, is one of the generous chefs who is glad to share a recipe. Indeed, this is a very healthy recipe with only 1/4 cup of cream and all those vegetables in each serving. And what a treat that it’s delicious as well. And the restaurant says if you want to cut calories even more, you can eliminate that 1/4 cup of cream.

You’ll find this special on the lunch menu where you can add grilled chicken, as in our photo, or shrimp. Of course they use their own marinara sauce to season the squash. We suggest you use your favorite recipe or try one of the high-end jarred sauces. In our photo, you’ll see that they’ve added broccoli as the fresh vegetable option. Cardamuro says if you want to add vegetables to your version, just stir your broccoli or other vegetable in at the same time you add the marinara and let everything simmer together.
