Hen Mother Cookhouse in John’s Creek serves its eye-popping XXL Cookhouse Chicken Biscuit on Saturdays and Sundays only. A brined chicken thigh is fried and sandwiched between a buttermilk biscuit with house-made pimento cheese, chili sambal glaze and house quick pickles. Smashed Yukons come on the side; eggs are an optional add-on.
