RECIPE: Make Zafron Restaurant’s Joojeh Kabob

We have enjoyed eating at Zafron’s since they opened. I always order the Cornish hens. Would they be willing to share the recipe for their marinade?

Joojeh Kabob is an Iranian dish of grilled chicken, said to be one of the most popular dishes of that country. At Zafron’s, it’s on the dinner menu and the marinade is used with Cornish hens. In our photo, the hens are served with the restaurant’s popular Jeweled Rice and grilled plum tomatoes.
- 1/2 small onion, finely diced
- 1/4 cup plain nonfat yogurt
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 2 teaspoons salt
- 3/4 teaspoon pepper
- Pinch ground saffron
- 2 (1 1/4-pound) Cornish hens
- Basmati rice and grilled plum tomatoes, for serving
- In a medium bowl, make marinade by whisking together onion, yogurt, lemon juice, lime juice, olive oil, salt, pepper and saffron.
- Cut hens into 4 pieces ― breasts, thighs, wings and legs. Arrange pieces in a bowl or food-safe plastic bag and cover with marinade. Toss together to make sure all sides of hens are in the marinade. Cover and refrigerate overnight.
- When ready to serve, heat grill to high. Lightly oil grates.
- Remove hen pieces from marinade and grill 10 minutes or until golden brown, turning midway in the cooking. Discard marinade. If desired, grill plum tomatoes to serve alongside hens. Serve with basmati rice. Serves 4.
