The health score of a well-regarded Korean restaurant in Duluth dropped below passing on a recent routine inspection because of repeat violations of unclean dishes and storage shelves.
The Gwinnett County health inspector said the manager in charge at Jang Su Jang, 3645 Satellite Blvd., was not performing well enough to prevent food safety risk factors at the restaurant.
Numerous dishes and containers were still dirty with food debris even though they had been cleaned. The items were re-cleaned. Food storage shelves on a small cart, and inside a cooler and a refrigerator were also dirty with food debris.
These were repeat violations for Jang Su Jang. The restaurant was given a health score of 60/U. Previous scores were 86/B and 97/A.
Points were also taken off because the restaurant did not have a parasite destruction letter for crabs served raw. The restaurant manager explained that the live crabs are frozen for 24 hours first, then served in soy sauce. However, since the crab is not cooked the restaurant must have proof that it came from an approved source, the inspector said.
Points were also taken off because of food storage violations. Food was being stored in reused boxes. Some food items were stored underneath the sink. And vegetables were stored in open boxes.
In addition, unapproved employee drinks were being kept underneath the dishwasher. The manger removed the drinks.
Jang Su Jang will be re-inspected.
