Fruit flies were inside two containers of liquor, and clean plates still had food residue at The Cheesecake Factory at the Mall of Georgia.

These and other violations dropped the restaurant’s score to a failing 64/U during the routine inspection on Oct. 22. The Cheesecake Factory, 3333 Buford Drive, Buford, previously had scores of 95/A in 2020 and 96/A in 2019.

Employees discarded the liquor and cleaned and sanitized the plates during the inspection.

In other violations, an employee was eating in the prep line area of the kitchen. Employees are not allowed to eat in areas where food is being prepared or served.

Time control markings were missing from many of the food items on the prep lines. Items are to be time-stamped with a start and discard time, not to exceed four hours. Labels were also missing from containers of condiments and sauces. And, the avocados still had stickers on their skins when sliced.

The restaurant had a repeat violation of not drying the dishes. The inspector found clean pans, bowls and containers stacked while wet.

The Cheesecake Factory will have a follow-up inspection within ten days.
