Make pupusas de queso

Step-by-step instruction for making pupusas, El Salvadoran treats made from masa harina that are much thicker than tortillas, and usually stuffed with cheese, beans or even meat.

Pupusas filled with cheese are popular in El Salvador. They're made with corn-based masa harina and are thicker than tortillas.

The cheese mixture -- shredded mozzarella, queso fresco and cottage -- will be slightly crumbly.

The masa harina should be well-kneaded. Don't be afraid to add more water if the dough seems too stiff.

Roll the dough between your palms to make a ball. Lightly butter your palms to prevent sticking.

Press the dough out with your fingers until it makes a flat circle (use your palm, too).

Fill the center with a tablespoon of cheese mixture. Fillings can also include beans and meat.

Cover the cheese with a second disk of dough, then use your fingers to seal the edges.

Cook each pupusa for about 1 to 2 minutes on each side, until lightly browned and blistered.
