Learn to make Century House Tavern’s simple butternut squash soup

Butternut squash soup from Century House Tavern

The Century House Tavern in Woodstock is one of my favorite restaurants—a lovely place to eat in an appealing little town that is well worth the drive from Atlanta. Everything I've eaten there has been wonderful, but the butternut squash soup was especially tasty. Do you think Chef Daniel Porubiansky would share his recipe? — Pat Penn, Atlanta

As always, executive chef Daniel Porubiansky was happy to share his recipe. It's a simple dish which lets the ingredients be the star. He sources his squash from Tim and Nichelle Stewart from Rockin' S Farm in Canton and uses butternut squash seed oil he purchases at The Leaning Ladder, an oil and vinegar boutique just down the street from the restaurant.
