Tomato aspic wants your respect

Several recipes for the Southern staple known as Tomato Aspic, most sent by readers with pictures.

Don't fear the tomato aspic! The gelatinous broth has long been on the "no-thanks" food list. We asked readers and chefs alike if they could give a new spin to this misunderstood Southern classic.

First we have Aunt Florence's Tomato Surprise, sent to us by Carol Sue Ravenel. It's a common tomato aspic recipe, so Ravenel believes that the recipe may have originated in an old cookbook. What's the "surprise"? We're not telling.

This is Old Southern Tea Room Tomato Aspic Salad, sent to us by Barbara Ratner. The recipe comes from an out-of-print cookbook. Ratner says the spicy cheese ball addition is essential.

This tomato aspic was made with artichokes and chopped olives, but it didn't pass our own kitchen's taste test.

Tomato aspic can be time-consuming and difficult to prepare. We asked chefs David Carson and Anne Quatrano from Quinones and Bacchanalia to create their own versions of tomato aspic. Quatrano is holding a version of Tomato Aspic with Artichokes.

At Quinones, David Carson serves Gazpacho Aspic, a fresh-flavored, contemporary aspic with a blue cheese foam, and crowned with mixed greens and a bacon chip.

Chef Anne Quatrano's version of Tomato Aspic with Artichokes followed a recipe submitted by Lulyanne Allgood, substituting for more fresh ingredients. That's mayonnaise and caviar topping the aspic.
