A Mexican restaurant in the Johns Creek area failed a recent health inspection after being cited for issues related to a lack of managerial control, improper food storage and poor sanitation.

La Cazuela at 4090 Johns Creek Parkway in Suwanee scored a 51/U Thursday after a routine inspection by the Forsyth County Health Department. The health department’s report states the following violations were observed:

• Manager failed to demonstrate knowledge of duties and food practices

• Employees touched clean dishes from washing machine after touched dirty dishes

• Employees stored their drinks on prep surfaces in the kitchen.

• Manager could not provide proof of freezing records for raw and under-cooked fish scheduled for parasitic destruction

• Dining tables not sanitized properly

• Dish machine did not have any measurable amount of sanitizer

• TCS (Temperature Control for Safety) foods not cooled properly

• Bucket was being used to scoop ice

• Hand sink was without hot water

La Cazuela’s general manager Juan Leon-Melgoza said in a phone interview Friday he is working to fix the score, and is in the process of retraining his kitchen staff on the correct practices related to food temperature and storage.

Restaurants with low-performing scores are generally re-inspected within 10 days.
