Although the margarita is the most popular tequila cocktail in the U.S., National Tequila Day on Friday might inspire some new concoctions — on the rocks, frozen, neat or mixed. Here are a few suggestions that will help you celebrate the Mexican agave spirit.

Lavender Paloma

2 parts Milagro Silver

1 part Fresh Grapefruit Juice

½ part Lavender and Vanilla Syrup

½ part Fresh Lime Juice

Top with Dry Lavender Soda

Garnish: Grapefruit Peel, Lavender, and Kosher salt

In a shaker filled with ice, pour the Milagro, grapefruit juice, syrup and lime juice, and shake vigorously. Strain into a Collins glass filled with ice. Top with dry lavender soda, and garnish.

Cucumber Caliente

2 oz. Tequila 512 Blanco

3 slices of fresh jalapeño

3 slices of peeled cucumber

1 oz. fresh lime juice

1 oz. St. Germain

In a glass muddle the cucumber and jalapeno slices. Add Tequila 512 Blanco, lime juice, and St Germain. Shake with ice and double strain into a martini glass (or glass of your choice).

Border Crossing

¾ oz. Texas honey syrup (1 part Texas honey, 1 part water)

¼ oz. anise, absinthe or pastis

3 dashes grapefruit bitters

1 Rio Star grapefruit twist, for garnish

1 star anise pod, for garnish

Combine all ingredients in a mixing glass. Add ice and stir until chilled. Pour into a rocks glass with ice. Garnish with grapefruit twist and star anise.
