The chicken bullet at Chinese Dhaba, a metro area Indian-Chinese fusion chain, shows you how simple flavors can be kicked up a few levels. The tender, juicy chunks of chicken are cooked beautifully and lacquered with a fire engine red sauce that is sweet, savory and very spicy.

Bits of pepper flakes glint red and yellow as they cling to the chicken, which also is studded with Sichuan peppercorns that add a buzz to the dish. Sauteed green onions provide a bit of contrast in color and texture, making the dish even more vibrant. The texture of the sauce is thick and sticky, hanging on to anything it touches. This is a dish that will require plenty of white rice and a large, cold drink.

The chicken bullet appetizer, which easily works as an entree, makes a strong argument to be counted among the best spicy dishes in town.
