Makes: 6 dozen cookies
Ingredients:
3 1/2 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
2 vanilla beans, halved, seeds scraped
1 cup granulated sugar
1 1/2 cups (3 sticks) unsalted butter or margarine, at room temperature
2 egg yolks
Instructions:
Preheat oven to 350 degrees. In a bowl, whisk together flour, cinnamon and salt. Set aside.
With an electric mixer on medium speed, beat vanilla seeds and sugar. Add butter and beat until pale and fluffy. Add egg yolks 1 at a time, beating well after each addition. Reduce speed to low. Add flour mixture and beat just until smooth.
Divide dough into 3 portions. Pack 1 portion into cookie press fitted with wreath disk (or other shape, if desired) and press shapes about 2 inches apart onto baking sheets lined with parchment paper. Bake until edges are just golden, 9 to 12 minutes.
